I had a lot of intra electrolytes and vitamins to strengthen me because they were all very weak. I went home and immediately started the SCD diet that I started 3 years ago. I`ve heard that they`re easy to make in an instant pot, but I`ve been very pleased with the precooked vacuum-sealed beets in the market from companies like Love Beets. Most vinegars are legal, with the exception of balsamic vinegar (except homemade; some recipes exist online). None with an illegal SCD starch coating or that may contain illegal ingredients used in the roasting process (as is the case with most commercial mixed nuts). These types of vacuum-sealed (but unsaved) beets make it very easy to slice them and add them to a salad or even create a beet salad with beets as the main ingredient. I remember reading in Elaine`s book that you shouldn`t try the diet unless you`re a fanatic (a bit paraphrasing). I knew what that meant. I stopped and thought about it for a few days, and then I started. The results were quick and fantastic. After a few months, I reduced my dose of asacol because I had constipation! After 6 months, I had the mother of torches. Terrible. Doc put me on prednisone, which didn`t do me any good. All the arthritis pain eventually led me to a physical therapist who referred me to a nutrition therapist who put me on the WELL And Psychology Syndrome (GAPS) diet, which is very similar to sickle cell disease. As I was familiar with SCD, I had already memorized the illegal list, so this part was easy.
GAPS is very structured and guides you step by step through the process to limit dietary errors. I lost a frightening amount of weight, but it eventually stopped. My gut was in very bad shape when I started, and it took a long time for it to heal (2 years), but it did. It was a miracle. I never want to be so sick again, so it`s „easy” for me to stay on this rigid diet. Since GAPS and SCD are so similar, I think all recipes are interchangeable. I was torchless for 4.5 YEARS! Then during a great kitchen conversion (!) I started taking Advil every day for a few weeks, and maybe a little too much wine at the end of the day. A carefree attitude because I`ve been doing so well for so long, and BAM! A torch.
